A Fantastic Spanish Easter Sweet: Torrijas

Torrijas are delicious sweet toasts with sugar and cinnamon or honey.

Put milk, sugar, lemon peel, cinnamon and vanilla in a pot on medium heat.

When it’s about to boil switch the heat off, cover the pot and let infuse the ingredients.

Let the milk cool down and then put it in a large pan.

Beat the eggs, add 2-3 spoons of flavoured milk and mix.

Slice the bread 1-2 cm thick and put abundant extra virgin olive oil in a pan.

Soak the slices of bread in the infused milk, then dig them in the eggs mixture.

After that, fry them until brown and crisp flipping them halfway.

Let them rest on paper towel to absorb oil in excess.

Sprinkle them with a mix of sugar and ground cinnamon and let them cool down.

Your torrijas are ready to enjoy!
