1 diente de ajo –> 1 clove of garlic
1 cebolleta –> 1 little onion
200g de jamón serrano –> 200g of jamón serrano
100 g de harina –> 100g of flour
1l de leche –> 1l of milk
aceite de oliva virgen extra –> extra virgin olive oil
2-3 huevos batidos –> 2-3 beaten eggs
pan rallado –> bread crumbs
sal –> salt
Cut the butter in dices and heat it in a pan until it melts.
Chop the onion and the clove of garlic, add them to the butter and cook for around 5 minutes over medium heat.
Then add the flour and mix quickly, then continue to stir for a couple of minutes until you obtain a smooth paste.
Add milk little by little constantly stirring, season with some salt and cook around 10 minutes until the sauce thickens.
Pour the béchamel sauce in a plate, spread it and let it cool down.
When the sauce is cold, shape it into croquettes.
Roll the croquettes in the bread crumbs, then dip them into the beaten eggs and roll them again in the bread crumbs.
Put them into the fridge for 30 minutes.
Then put abundant olive oil into a deep pot, heat it and, when it reaches the right temperature, fry the croquettes for 2-3 minutes turning them gently
Remember to put only 5-6 croquettes at a time!
Lift them with a slotted spoon and put them over some paper towel to drain them well.
